Pumpkin Cookies

These are the best cookies - very popular at potlucks and bake sales in the fall. Erin - you have to make plain icing (sorry).

1/2 c. margarine
1 c. sugar
2 eggs (real or fake, doesn't really matter)
1 c. pumpkin puree
2 c. flour (whole wheat is better)
2 t baking powder
1 t salt
1 T cinnamon (but I always put in more)
1 t nutmeg (more)
1/2 t ginger (I like my spices!)
1 c raisins
1 c nuts (walnuts are especially good)

Cream margarine and sugar, add eggs and pumpkin and mix well. Combine dry ingredients and blend with wet. Add raisins and nuts.

Drop spoonfuls on a cookie sheet (you should probably grease it) and bake at 350 for 15 mins. When they're cool, ice them with lemon icing:

Lemon Icing

2 c icing sugar
1 t lemon juice

Mix together, add milk as needed to make runnier.
