Pineapple-Banana Muffins

These are so, so good and moist. I added some chopped strawberries - pecans or something would be nice too. This recipe is from my Salt Spring cookbook.

3 medium bananas, mashed (about 1 1/2 c)
1/2 c pineapple, drained and chopped
1/3 c vegetable oil
1 egg
1 c whole wheat flour
1 t baking soda
1 t baking powder
3/4 c sugar
3 T grated coconut
1/2 c sunflower seeds
1/2 c bran

1. Combine the wet ingredients in a mixing bowl.

2. Combine the dry ingredients in a separate bowl.

3. Fold the wet and dry ingredients together.

4. Spoon the batter into greased muffin tins.

5. Bake at 375 for 20 mins.
