Carrot, Kasha and Caraway Pilaf

If you're good, you'll serve this with some greens for a nice, healthy meal.

1 med. carrot, diced
1/2 med. onion, diced
2 T olive oil
1 c kasha
2 cloves garlic, minced
1 t caraway seeds, crushed
2 c vege stock
1/2 t salt
black pepper to taste
2 t paprika

1. In a medium saucepan, over medium heat, sauté the carrot and onion in the oil for about five mins. Stir in the kasha, garlic and caraway seeds, and sauté about three mins. more.

2. Add the stock, salt and pepper, and bring to a simmer. Cover, reduce heat to low and cook 15 mins.

3. Turn off heat and leave standing, covered, for 10 mins. Sprinkle with paprika, toss lightly and serve.
