Harvest Herb Bread

I've only made this once, and when I did I wasn't exactly true to the recipe - I used a real egg, omitted the dried herbs and the raisins and added fresh rosemary, cranberries and walnuts. It was really good, but I can't make any promises for the original. If you try it, let me know. From How it all Vegan (don't tell the authors I used a real egg).

1 1/2 c flour
1/2 t salt
1 1/2 t baking powder
1/2 t baking soda
1/4 t dried marjoram
1/8 t dried oregano
1/2 t dried basil
pinch of dried thyme
1/2 c raisins
1/2 c chopped nuts (optional)
egg replacer (to equal one egg)
2 T sweetener
4 T oil
1 t vinegar
3/4 c soy milk

Preheat oven to 400F. In a large bowl, sift together the flour, salt, baking powder and baking soda. Add remaining ingredients and stir until just mixed. Spoon into a lightly oiled loaf pan and bake for 20-30 mins. Test with a knife to see if done. Makes 1 loaf.
